Our Spring Wine Club has been released and with it, this delicious recipe is now yours to try! 

Red Wine-Braised Beef Short Ribs
Recipe by Amaterra Winery Executive Chef Jami Flatt

Ingredients:
- 5 lb chuck tail flap or bone-in beef short ribs
- Kosher salt
- Neutral oil
- 2 onions, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 6 garlic cloves, smashed
- 3 tbsp tomato paste
- 3 cups red table wine
- 2-3 cups beef stock or water
- 1 lb mushrooms, halved
- 6-8 sprigs fresh thyme
- 2 fresh bay leaves

To Finish:
- 4-6 tbsp cold butter
- 1 tbsp chopped fresh thyme
- 2 tbsp sliced chives 

Method:
Season beef lightly with salt and refrigerate uncovered for 12-24 hours. Heat oven to 300F. Sear beef in neutral oil on all sides in a heavy pot until deeply browned, then remove.
Add onions, carrots, and celery to the pot and cook until softened and lightly caramelized. Stir in garlic and tomato paste; cook until brick red. Deglaze with wine and reduce by half.
Return beef to pot with mushrooms, thyme, bay leaf, and enough stock to reach three-quarters up the meat. Bring to a gentle simmer, cover, and braise in the oven for 3-3.5 hours, turning once, until tender.
Remove beef. Strain braising liquid, skim fat, and reduce until glossy. Off heat, whisk in butter and finish with chopped thyme and chives.
This dish mirrors the structure of Amaterra’s estate reds and the bolder varieties of 51Weeks Winemaking. The slow braise softens the beef’s richness while the wine-reduced sauce amplifies the dark fruit, savory herbs, and subtle acidity. Silky tannins echo the meat’s texture, while bright aromatics keep each bite lifted and balanced-making this a natural, seamless pairing at the table.

From barrel to glass. Join us March 31 for an exclusive Wine Club Barrel Tasting focused on Cabernet Sauvignon—where you’ll taste through wines still in barrel alongside finished selections, experiencing their evolution firsthand.

All hands on deck for bottling! This week our production team, Tasting Room Associates, and an incredible group of volunteers came together for a major milestone—bringing these rosés (and a whole bunch of other wine) from tank to bottle.

You’re seeing something special here: two rosé wines being filled and labeled, now officially stepping into the Amaterra portfolio after previously living under Amaterra’s 51Weeks Winemaking label. A true evolution, and a moment worth celebrating.

From the first pick to this final step, it takes a community to make it happen—and this is what it looks like behind the scenes.
